Spicy Italian Pork Sausage Pasta with Peas
Ingredients
- 2 tbsps extra virgin olive oil
- 1 large onion diced
- 4 garlic cloves diced
- 1 pound Cioffi’s Spicy Italian pork sausage casings removed
- 1 cup white wine optional
- 2 cans 14 oz diced tomatoes fresh tomatoes work too
- 1 tbsp tomato paste
- ½ cup heavy cream
- 3 tbsp chopped parsley
- 2 tbsp chopped basil
- 1 box of pasta of choice
- 2 cups frozen peas
- Red hot chili flakes Calabrian chili peppers to taste optional
- Salt and pepper
Instructions
- Heat oil in a heavy pan over medium-high heat. Add onion and garlic and sauté until tender for approximately 5 minutes. Move the onion and garlic to the sides of the pan and add spicy sausage meat in the center.
- Cook for a few minutes, breaking up the meat with a spatula or wooden spoon. Then mix with the onion and garlic. Cook for another 3 minutes. Add tomato paste and salt & pepper to taste.
- Cook for 2 minutes. Add the wine and simmer for 2 more minutes. Add the tomatoes and cook for 10-15 minutes. Add the heavy cream, peas, basil, and parsley in the last few minutes of cooking to keep their green colour.
- Boil pasta in salted water. Drain, toss in the sauce, and serve with Parmesan cheese. Buon appetito!
Notes
Note: If you’re using mild Italian sausage, you might want to add some chili flakes for spice.
