1poundCioffi's Spicy Italian pork sausagecasings removed
1cupwhite wineoptional
2cans 14 oz diced tomatoesfresh tomatoes work too
1tbsptomato paste
½cupheavy cream
3tbspchopped parsley
2tbspchopped basil
1box of pasta of choice
2cupsfrozen peas
Red hot chili flakes Calabrian chili peppers to tasteoptional
Salt and pepper
Instructions
Heat oil in a heavy pan over medium-high heat. Add onion and garlic and sauté until tender for approximately 5 minutes. Move the onion and garlic to the sides of the pan and add spicy sausage meat in the center.
Cook for a few minutes, breaking up the meat with a spatula or wooden spoon. Then mix with the onion and garlic. Cook for another 3 minutes. Add tomato paste and salt & pepper to taste.
Cook for 2 minutes. Add the wine and simmer for 2 more minutes. Add the tomatoes and cook for 10-15 minutes. Add the heavy cream, peas, basil, and parsley in the last few minutes of cooking to keep their green colour.
Boil pasta in salted water. Drain, toss in the sauce, and serve with Parmesan cheese. Buon appetito!

Note: If you're using mild Italian sausage, you might want to add some chili flakes for spice.
