Spicy Italian Pork Sausage Pasta with Peas

Ingredients
  

  • 2 tbsps extra virgin olive oil
  • 1 large onion diced
  • 4 garlic cloves diced
  • 1 pound Cioffi’s Spicy Italian pork sausage casings removed
  • 1 cup white wine optional
  • 2 cans 14 oz diced tomatoes fresh tomatoes work too
  • 1 tbsp tomato paste
  • ½ cup heavy cream
  • 3 tbsp chopped parsley
  • 2 tbsp chopped basil
  • 1 box of pasta of choice
  • 2 cups frozen peas
  • Red hot chili flakes Calabrian chili peppers to taste optional
  • Salt and pepper

Instructions
 

  • Heat oil in a heavy pan over medium-high heat. Add onion and garlic and sauté until tender for approximately 5 minutes. Move the onion and garlic to the sides of the pan and add spicy sausage meat in the center.
  • Cook for a few minutes, breaking up the meat with a spatula or wooden spoon. Then mix with the onion and garlic. Cook for another 3 minutes. Add tomato paste and salt & pepper to taste.
  • Cook for 2 minutes. Add the wine and simmer for 2 more minutes. Add the tomatoes and cook for 10-15 minutes. Add the heavy cream, peas, basil, and parsley in the last few minutes of cooking to keep their green colour.
  • Boil pasta in salted water. Drain, toss in the sauce, and serve with Parmesan cheese. Buon appetito!

Notes

Note: If you’re using mild Italian sausage, you might want to add some chili flakes for spice.
