Chef Asher’s Simple Caribbean BBQ sauce

  • ½ cup pineapple juice
  • ½ cup orange juice
  • ¼ cup brown sugar
  • ¼ cup vinegar
  • ¼ cup ketchup
  • 2 Tbsp soy sauce
  • 2 tsp finely grated ginger
  • 1 Tbsp corn starch

Instructions

  • Bring BBQ sauce ingredients, except corn starch, to a boil stirring continuously to avoid burning and simmer.

  • Fry plantain slices in oil on medium heat until golden brown and set aside.
  • Fry or bake Johnston's thick sliced bacon to your preference.
  • Fry egg to your preference, season with your Caribbean seasoning before
  • Construct your JamaiCanadian Sunny Yummy Breakfast Sandwich: Place your egg on the base of the bun, top with your Johnston's thick sliced bacon, then fried plantain and drizzle with Caribbean BBQ sauce to taste. Place bun on top and enjoy!
