Any all purpose Jamaican seasoning or salt, pepper, cayenne, ground pimento for sprinkling on the egg
Johnston's thick sliced bacon
½cupCanola oil or preferred frying oil
Sliced ripe plantain plantain should be black on the outside before peeling, like an overripe banana

½cuppineapple juice
½cuporange juice
¼cupbrown sugar
¼cupvinegar
¼cupketchup
2Tbspsoy sauce
2tspfinely grated ginger
1Tbspcorn starch
Instructions
Bring BBQ sauce ingredients, except corn starch, to a boil stirring continuously to avoid burning and simmer.
To thicken, add 1 Tbsp corn starch to 1/4 cup cold water. Whisk until smooth, adding small amounts at a time to sauce, whisking until desired thickness is reached. Set aside.
Fry plantain slices in oil on medium heat until golden brown and set aside.
Fry or bake Johnston's thick sliced bacon to your preference.
Fry egg to your preference, season with your Caribbean seasoning before
Construct your JamaiCanadian Sunny Yummy Breakfast Sandwich: Place your egg on the base of the bun, top with your Johnston's thick sliced bacon, then fried plantain and drizzle with Caribbean BBQ sauce to taste. Place bun on top and enjoy!
