Bacon Butter & Bacon Oil

Ingredients
  

Bacon Butter

  • 1 lb unsalted butter softened
  • 4 strips bacon cooked, dried, and crumbled (about 3/4 cup)
  • pinch salt & pepper
  • cup chives finely chopped

Bacon Oil

  • 2 strips bacon cooked well & dried of excess grease
  • 2 cups olive oil

Instructions
 

Bacon Butter

  • Beat butter in a mixer and slowly add rest of ingredients
  • Use melon baller, piping bag, or roll into a tube and cut to portion butter
  • Place in fridge for 5 min to firm
  • To store, keep in the fridge for up to 5 days or freeze portioned to use when needed
  • Great on top of cooked meat or vegetable, or add to mashed potatoes, or whatever your bacon-loving heart desires

Bacon Oil

  • Chop up bacon and add to sauce pan with oil
  • Carefully bring to rolling boil, simmer for 2 minutes
  • Remove from heat and set for 10 minutes
  • Strain oil into container with lid and discard bacon
  • Label and keep in fridge for up to 1 month
  • Enjoy oil for dressings or use in lieu of cooking oil for any desired recipes
