- Can be broken down into Tenderloin and New York Striploin
- When left as a full T-Bone, this is a large steak; minimum 2 per package
Top / Inside Round

- Tenderness – 5
- Can be cut into round steaks (stew/slow cooker) or roasts (oven)
Bottom / Outside Round
Bottom / Outside Round
- Tenderness – 4
- Best as an oven roast
Sirloin Tip

- Tenderness – 6
- Can be cut into roasts or steaks
- Very nice oven roast and a decent grilling steak
Ground Beef
Ground Beef
- Amount of ground beef that you receive depends on which cuts you put into ground. Packaged in 1 lb chub bags
Soup Bones
Soup Bones
- Is a mixture of meaty neck bones, marrow bones and knuckle bones
Waste
Waste
- Waste is the excess bones not suitable for soup bones and the trimmed fat
- On special request, can save the waste for you
- Bones may be suitable for dog owners
- Waste trim and bones are mixed together in a box with a liner

- Can be cut into roasts or steaks
- Can request Ribeye, which is the prime rib without the bone
- Prime rib bones are excellent to BBQ
Chuck

- This is a tough cut; we generally recommend that Chuck be put to ground beef, but can be cut into roasts or steaks
Crossrib Roast

- Tenderness – 4
- Is a pot roast so it’s great in a slow cooker or a crock pot
- Can be put to ground beef
Sausage
Sausage
- All batches of sausage must be at least 25 lbs per batch except for beef dinner sausage which is a minimum of 10 lbs per batch
- Pork trim can be added into your sausages. Pork will add more flavour and moisture

Short Ribs
Short Ribs
- Tenderness – 2
- Can be cut in squares as the traditional way or as Maui ribs
- Square cut is best when slow cooked and Maui ribs are best when marinated and cooked on the BBQ
- Can be put to ground beef
- Maui ribs are long, thin strips of meat with small bones attached. These ribs are only available if your beef is over 500 lbs
Brisket

- Tenderness – 2
- Can be ground, whole or rolled (rolled and tied to resemble a roast)

- Unless otherwise requested, the liver is sliced and bagged in approximately 1 pound packages; kidneys 1 per pack; heart 1 per pack; and tongue 1 per pack

When two customers are sharing a side of beef they must have the same cutting instructions. They both must choose either Option 1 or Option 2 together. Roasts are a standard size of 3-4 lbs and steaks are 2 per package minimum. If you require more steaks per package please let us know. | |
