Split Pea and Farmer Sausage soup

Ingredients
  

  • 1 package dried yellow split peas
  • 1 package Farmer Sausage
  • 1 large onion chopped
  • 1 teaspoon salt & pepper
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • Garnish with cilantro green onion, or cheese to taste.

Instructions
 

  • Rinse split peas with cold water. Place in a Dutch oven or pot and thoroughly cover with fresh water. Bring to a boil for 2 minutes before removing from the heat. Cover pot and let stand for 1-4 hours or until peas are softened. Drain and rinse peas.
    (if you have an instant pot, this step goes a lot quicker!)
  • Slice and sear Johnston's Farmer sausage before adding in onion, salt, pepper, thyme, and bay leaf. Fill the pot with water until the ingredients are thoroughly covered.
  • Bring your soup to a boil then reduce heat and cover. Finally, let simmer for 1-1/2 hours, stirring occasionally. Test peas for desired softness.
