Split Pea and Farmer Sausage soup

Ingredients
- 1 package dried yellow split peas
- 1 package Farmer Sausage
- 1 large onion chopped
- 1 teaspoon salt & pepper
- ½ teaspoon pepper
- ½ teaspoon dried thyme
- 1 bay leaf
- Garnish with cilantro green onion, or cheese to taste.
Instructions
- Rinse split peas with cold water. Place in a Dutch oven or pot and thoroughly cover with fresh water. Bring to a boil for 2 minutes before removing from the heat. Cover pot and let stand for 1-4 hours or until peas are softened. Drain and rinse peas.(if you have an instant pot, this step goes a lot quicker!)
- Slice and sear Johnston's Farmer sausage before adding in onion, salt, pepper, thyme, and bay leaf. Fill the pot with water until the ingredients are thoroughly covered.
- Bring your soup to a boil then reduce heat and cover. Finally, let simmer for 1-1/2 hours, stirring occasionally. Test peas for desired softness.
