Glazed Cottage Ham

Ingredients
- 4-5 lbs Cottage Ham
- ½ cup brown sugar
- 2 tbsp dry mustard
- 1 tbsp orange juice
- 1 tsp grated orange rind
Instructions
- Cover cottage ham in its poly film wrapper with water. Pick several times.
- Simmer 1 ¼ hours. Remove wrapper.
- Place cottage ham on rack in shallow pan; cover with glaze.
- Bake at 325°F for 30 minutes, brushing occasionally with glaze.

I made this last night for my family. It got rave reviews! I served it as part of a picnic-style cold supper of salads, fresh fruit, crudités, pastured chicken, and deviled eggs. It was a tangy, flavourful complement to the meal!
I made this tonight and we loved it. Served it with new potatoes and cabbage cooked in the water from the ham. So delicious

Made this tonight – delicious! Although, I had already taken it out of the packaging, so I just went ahead simmering without the plastic. Tasted great with the glaze!
