Loin

Loin

  • Can be cut to chops or roasts
  • Tenderloins can be separated from the loin, giving boneless chops
  • We typically cut chops be cut 3/4″ thick. If you would like them thicker, please request
  • Can be made into Back Bacon for an additional charge
Picnic

Picnic

  • Can be cut to roasts, but is typically ground for sausages and/or ground pork
Belly

Belly

  • Typically cured into Bacon
  • Bacon may be taken in slab form (rind-on or rind-off) or sliced and vacuum packaged
  • Can also be used as Side Pork (cut in 1/2 or left whole) or put to ground pork
Hocks

Hocks

  • Can be used as fresh, smoked, or put to ground pork
  • Smoked Hock is commonly used for making pea soup
Feet

Feet

  • On special request, we can save the feet for you
Leg

Leg (Hind-Leg)

  • Can be cut to roasts and/or ham. If ham, there is a charge for curing & smoking
Butt

Butt (Shoulder)

  • Can be cut to bone-in or boneless roasts, bone-in or boneless steaks (boneless is an additional charge)
  • This cut is also used for Cottage Roll with a curing & smoking charge
  • Makes great pulled pork
Head

Head

  • On special request, can save the head for you
Jowl

Jowl

  • Can be used as fresh, smoked, or put to ground pork
  • Smoked Jowl is commonly used for making pork and beans
Ribs

Ribs

  • Will be cut into Spare Ribs typically unless Back Ribs are requested as well (only available if boneless pork chops are requested)
Offal

Offal

  • Only available with a custom pig, but may be purchased at any time
  • Unless otherwise requested, the liver is sliced and bagged in approximately 1 pound packages; kidneys 1 per pack; heart 1 per pack; and tongue 1 per pack
Ears

Ears

  • Can be smoked or fresh
  • Smoked Ears are a perfect snack for your dogs
  • Only receive ears if you request your head to be saved
Pork Trim

Pork Trim

  • Can be put to ground pork or made into Breakfast Sausage or Uncooked Farmer Sausage (no minimum batches required)
  • Additional charges apply for having all sausages made. Click here for sausage prices
  • All other sausages not listed above are a minimum batch of 25 lbs
