Bacon Apple Pie

Ingredients
- 1 ready to bake pie shell
- 5-6 granny smith apples peeled, cored & sliced
- 1 tbsp cinnamon
- ½ cup brown sugar
- 2 tbsp lemon juice
- 6-8 slices Johnston’s Bacon uncooked (for lattice topping)
- 4 slices Johnston’s Bacon cooked & coarsely chopped
Instructions
- Pre-heat oven to 350°F
- In a bowl, mix apples, cinnamon, brown sugar, lemon juice and chopped bacon
- Pour mixture onto shell crust
- Place 3-4 slices of uncooked bacon slices on top of the pie filling, spaced evenly apart in a parallel direction
- Basket weave (under, over, under, etc.) the remaining 3-4 slices of uncooked bacon intersecting the first set of slices
- Sprinkle the bacon lattice with brown sugar
- Cook until apples are tender and bacon is cooked, about 35 minutes
- Tip: For the second layer of bacon slices, alternating the weave (starting the first slice from over, second slice from under, etc – see picture for clarification) will keep the bacon slices from curling up
