Bacon Apple Pie

Ingredients
  

  • 1 ready to bake pie shell
  • 5-6 granny smith apples peeled, cored & sliced
  • 1 tbsp cinnamon
  • ½ cup brown sugar
  • 2 tbsp lemon juice
  • 6-8 slices Johnston’s Bacon uncooked (for lattice topping)
  • 4 slices Johnston’s Bacon cooked & coarsely chopped

Instructions
 

  • Pre-heat oven to 350°F
  • In a bowl, mix apples, cinnamon, brown sugar, lemon juice and chopped bacon
  • Pour mixture onto shell crust
  • Place 3-4 slices of uncooked bacon slices on top of the pie filling, spaced evenly apart in a parallel direction
  • Basket weave (under, over, under, etc.) the remaining 3-4 slices of uncooked bacon intersecting the first set of slices
  • Sprinkle the bacon lattice with brown sugar
  • Cook until apples are tender and bacon is cooked, about 35 minutes
  • Tip: For the second layer of bacon slices, alternating the weave (starting the first slice from over, second slice from under, etc – see picture for clarification) will keep the bacon slices from curling up
