Breakfast Leftovers for Pulled pork

I am asked many times what to do with the leftover pulled pork that I have made either on the smoker or in the oven. My go-to is a delicious breakfast sandwich in the morning. Now you can add and dress yours up however you like but my favourite is the basic breakfast roll.

Ingredients
  

  • 150 gm Leftover Pulled Pork
  • Butter dollop
  • Apple juice drizzle
  • Cheddar cheese one slice
  • 1 Egg
  • 1 Burger bun

Instructions
 

  • Heat a skillet over medium heat and melt the butter.
  • Place your desired amount of shredded pork in the skillet for a few minutes until the pork begins to caramelize. Do this in batches.
  • Drizzle apple juice over the pork and place a slice of cheese on top of the pile
  • Cover with lid for 30 to 45 sec to gently melt the cheese
  • Remove the pork and set aside without breaking the melted cheese. Cover loosely to keep warm.
  • Using the same pan fry your egg to your liking.
  • To build your sandwich, carefully place your cheesy pulled pork on the bun. Scoop your egg on top and close the bun!

Notes

Add sautéed onions, bacon strips, hot sauce, mayonnaise, or micro greens to spice it up!
