Ground Pork Shepherd's Pie ☘️🍀

Ingredients
  

Filling:

  • 1 tbsp olive oil
  • 1 large onion chopped
  • 2 carrots diced
  • 2 cloves garlic minced
  • 2 lb ground Johnston’s pork 900g
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup vegetable broth
  • 1 cup stout beer
  • 1 tsp dried thyme
  • 1 tsp cayenne pepper
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup mixed frozen veggies optional

For the mashed potato topping:

  • 2 lbs potatoes, peeled and diced 900g
  • 4 tbsp butter
  • ¼ cup milk
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Start by making the mashed potato topping. Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  • Mash the potatoes with butter, milk, salt, and pepper until smooth and creamy. Set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and carrots and cook until softened about 5 minutes. Add the minced garlic and cook for another minute.
  • Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  • -Stir in the tomato paste, Worcestershire sauce, broth, stout, dried thyme, salt, and pepper. Simmer for 10 minutes, allowing the flavors to blend together. Taste and adjust seasoning if necessary.
  • Stir in the frozen veggies and cook for another 2-3 minutes.
  • Transfer the pork mixture to your baking dish and spread it out evenly.
  • Spoon the mashed potatoes over the pork mixture, spreading them out with a spatula. Or using a piping bag for an added design to the top!
  • Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the mashed potatoes are golden brown and the filling is bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

      Hello! You can replace beer with chicken stock if you prefer!
