Jalapeño Cheese Crunchie Pork Tenderloin

- 2 pieces Johnston’s Pork Tenderloin
- 3 cups crushed up Jalapeño Cheese Crunchies
- 100 ml mustard
- Salt and pepper to taste
- About 50 ml oil depending on skillet size

Directions:
- Finely crush about 3 cups Jalapeño Cheese flavoured Crunchies. This also works well with flavoured tortilla chips such as Doritos.
- Add salt, pepper, and crunchies to medium size mixing bowl.
- Coat tenderloins with mustard.
- One at a time, firmly pat crunchies mix onto tenderloin, giving a breaded look.
- Heat oil in skillet to med/high heat.
- Carefully place tenderloin onto skillet and sear on all sides, being careful not to rub off the coating.
- Reduce heat to low/med and cook to 150°F, or desired doneness.
- Let rest then slice and serve.
