Rhonda’s Wonder Chili

Ingredients
  

  • 1 ½ lbs Johnston's Ground Pork
  • 2 ½ lbs ground beef
  • 3 anaheim peppers chopped
  • 1 each red, green, and yellow peppers chopped
  • 1 onion chopped
  • 2 cans tomato sauce 8 oz each
  • 1 can crushed/diced tomatoes
  • 1 can diced tomatoes
  • 1 can chili beans drained
  • 1 can kidney beans drained
  • ½ cup brown sugar
  • 1 Tbsp Cowtown light chili powder
  • 2 tsp cumin
  • 1 Tbsp San Antonio original chili powder
  • 1 tsp Terlingua dust substitute 1/4 tsp cayenne, if desired
  • 2 Tbsp Mexene chili powder
  • ½ tsp Mexican oregano
  • 1 tsp crushed red pepper flakes
  • 1 tsp salt
  • 1 Tbsp garlic granules
  • 1 lime

Instructions
 

  • Brown ground pork and beef in small batches. Drain and set aside.
  • Sautee peppers, onions and chilies.
  • Add tomato sauce and diced tomatoes. Bring to a boil.
  • Add seasonings. Stir till blended then add all meats.
  • Reduce heat to a simmer. Cook about 2 hours stirring occasionally.
  • Taste. Add salt if needed. If more heat is needed add cayenne (be careful).
  • If adding beans add 30 minutes before serving.
  • 15 minutes before serving, squeeze the juice of the lime.

Notes

All chili powders can be substituted for your own brand. The ones
used here are typical Texas powders. Just use equal amounts of yours for
the recipe.
