Pig Wings

A Pig Wing is a specialty cut of pork made from the lower shank of a pig, resembling chicken wings in size and shape, and are known for their tender, flavourful meat. Ask your local butcher to cut it to size!
- 8 Pig wings
- ½ cup Franks red hot sauce
- ½ cup BBQ sauce
- 2 tbsp salted butter
- 2 tbsp sriracha hot sauce
- 2 Tbsp honey
- Blue cheese dressing for dipping
- 200 ml your favorite BBQ Seasoning. I can provide mine if you want (@rustys_bbq)
30 mins before you place on the cooker, liberally season all sides of your butcher trimmed pig wings. Set your Smoker or indirect side of your gas bbq to 275 degrees.
Place season wings on the grill and slowly roast in smoke for 2 hours.
Once smoked place wings in a 3-inch-deep roasting pan or foil pan and cover the top with foil. Place the pan back on the bbq or oven and roast wrapped up for approx. another 2-3 hours at 300 degrees. The wings scan vary in time to finish so pull your wings when they hit an internal temp of 200 degrees.
For your sauce, combine your BBQ sauce, both hot sauces, butter, and honey in a small sauce pot. Cook for 3 mins until butter is melted and mixed in.
Once your wings are done. Baste them in your sauce and place back on the bbq/smoker on low for 5 mins so sauce can set.
Serve your wings with a side of blue cheese dressing or ranch.
